Job description
The Manager Hub & Global Lounge Menu Design role at Etihad Airways is responsible for managing the delivery of assigned culinary projects for airport lounges and onboard dining experiences, ensuring that concepts are developed, tested, and implemented in line with brand, quality, and operational standards. The role works closely with Culinary Managers and cross-functional teams across Catering, Service Delivery, Procurement, Marketing, Training, and Finance to ensure end-to-end execution of culinary initiatives. Reporting into the culinary leadership structure and supporting the Senior Manager Culinary Standards, the position focuses on delivering innovative dining experiences while maintaining consistency, managing timelines, and controlling budgets. The role includes ownership of menu cycle development, presentation guidelines, service delivery frameworks, preparation of product specifications and SOPs, supplier coordination including RFQs and contracts, monitoring CAPEX and OPEX budgets, supporting trials and testing, conducting quality audits, and leveraging competitor analysis, market research, and guest feedback to inform design and execution decisions within Etihad Airways’ global lounge and onboard culinary portfolio.

Key responsibilities
- Manage assigned lounge and onboard culinary projects from initial brief through to final delivery, ensuring milestones, budgets, and quality standards are achieved
- Collaborate with Culinary Managers to develop menu cycles, presentation guidelines, and service delivery frameworks aligned with brand and operational standards
- Coordinate with Catering, Service Delivery, Procurement, Marketing, Training, and Finance teams to ensure smooth and timely project execution
- Prepare, maintain, and update product specifications, standard operating procedures, and operational documentation for assigned culinary projects
- Support supplier engagement activities including RFQs, contract coordination, and ongoing supplier performance tracking
- Monitor and report on assigned CAPEX and OPEX budgets, identifying risks and opportunities for cost optimization
- Assist with product trials, testing activities, and operational readiness checks to ensure successful implementation of culinary concepts
- Conduct quality checks and audits for lounge and onboard culinary programs, reporting findings and recommending improvements
- Contribute to competitor analysis, market research, and guest feedback reviews to inform menu design and project decisions
- Prepare presentations and status updates for internal stakeholders on project progress, outcomes, and performance
Experience & skills
- Possess a university degree or equivalent qualification, preferably in Hospitality, Culinary Arts, or a related field
- Demonstrate a minimum of 5 years of professional experience, including at least 3 years in project management within airline catering, hospitality, or related sectors
- Have experience managing product or service development projects from concept through implementation
- Exhibit commercial awareness with experience in basic budgeting, CAPEX and OPEX management, and supplier coordination
- Demonstrate knowledge of culinary trends, premium hospitality standards, and operational airline catering processes
