Job description
The Hygiene Manager at InterContinental Riyadh is responsible for maintaining the highest hygiene and food safety standards across the hotel’s operations. The role oversees audits, compliance, training, and continuous improvement in hygiene management, ensuring a safe, clean, and welcoming environment for guests and staff.

Key responsibilities
- Maintain and monitor all Food Safety and Hygiene-related records, forms, checks, and audits
- Conduct hygiene audits for kitchen associates and provide feedback
- Perform spot checks on received food items for temperature compliance
- Inspect all food holding, storage, and transport equipment
- Ensure proper labeling, dating, and rotation of food items (FIFO compliance)
- Conduct daily kitchen inspections and develop corrective action plans
- Coordinate microbial food tests with kitchens and laboratory
- Conduct vendor inspections alongside Purchasing team and Executive Chef
- Liaise with Pest Control and Housekeeping teams for pest management
- Maintain and continuously improve hygiene standards across all hotel operations
- Conduct Food Handlers Training sessions with the Training Manager
- Ensure all documentation of hygiene and food safety standards is up-to-date
Experience & skills
- Bachelor’s degree or higher in Hygiene Management or equivalent
- Minimum 4 years of relevant experience, including management experience
- Proficient in local language
- Certifications or permits required by local governmental agencies
- Strong problem-solving and decision-making skills
- Knowledge of FSMS guidelines and local food hygiene regulations
