Job description
The Procurement Manager at Raffles & Fairmont The Red Sea leads the sourcing, purchasing, and inventory management of all hotel goods and services, ensuring cost-effective, high-quality procurement aligned with luxury brand standards. The role includes managing vendor relations, supervising receiving operations, coordinating with culinary and operations teams, and supporting pre-opening processes, while maintaining compliance with regulatory and sustainability requirements.

Key responsibilities
- Oversee procurement of goods and services through competitive bidding for optimal pricing and quality.
- Maintain organized storage and filing systems, track inventory, and ensure accurate purchase order documentation.
- Partner with Culinary Director and F&B leadership to align procurement strategy with menu and operational requirements.
- Lead sourcing, negotiation, and contracting with suppliers, ensuring consistent quality and value.
- Develop and maintain vendor relationships, conduct performance reviews, and drive continuous improvement.
- Monitor market trends, pricing fluctuations, and supply risks to support budgeting and cost control.
- Implement procurement policies, inventory controls, and sustainability standards.
- Coordinate with operations for menu roll-outs, tastings, and product approvals.
- Analyze purchasing data and KPIs to identify savings opportunities, waste reduction, and efficiency improvements.
- Supervise, train, and coach Purchasing & Receiving staff; develop SOPs as needed.
- Oversee invoice reconciliation, financial reporting, and ensure compliance with hotel financial policies.
- Manage delivery operations, storage, stock rotation, and distribution to departments and outlets.
- Ensure adherence to food safety, regulatory, and luxury brand standards.
- Support pre-opening project coordination, scheduling, and documentation.
- Address operational issues, provide solutions, and maintain proactive communication with leadership.
Experience & skills
- Minimum 6 years of progressive procurement or purchasing experience in hospitality or related industries.
- Pre-opening experience in luxury hotels or resorts is required.
- Proven knowledge of food handling standards, beverage management, and inventory control.
- Supervisory experience with demonstrated ability to manage and develop a team.
- Proficiency in Windows, Word, Excel, and other standard office applications.
- Excellent verbal and written communication skills, with a customer-oriented and service-focused mindset.
- Ability to multitask, prioritize, and work independently in a fast-paced environment.
- Strong problem-solving skills and the ability to maintain confidentiality.
- High standards of personal grooming and presentation consistent with ultra-luxury brand expectations.
