The Director of Food & Drinks at Conrad Abu Dhabi Etihad Towers leads the entire Food & Drinks operation, driving revenue across all outlets while ensuring exceptional quality and service. The role oversees restaurants, bars, banquets, room service, in-room dining, kitchens, stewards, and special events, maintaining high operational standards and delivering outstanding guest experiences that maximize profitability. The Director oversees the complete management and strategic direction of the hotelās Food & Drinks division, ensuring each outlet reflects the unique character of the Conrad brand where modern elegance meets inspired service. The position combines a deep passion for gastronomy with strong business acumen to drive operational success, profitability, and brand distinction. Responsibilities include planning and directing the administration and operational planning of the Food & Beverage department to meet daily operational needs, luxury requirements, Quality Audits, and Forbes standards. The role requires assigning and delegating authority across food and beverage subdepartments, monitoring and developing schedules for restaurants and bars to achieve profitable results, collaborating with the Executive Chef and Food & Beverage management team on menu design and merchandising to attract predetermined customer markets, and implementing effective food cost control, beverage cost control, and labor cost control measures. The Director monitors the food and beverage budget to ensure expenditures remain within budget limitations, including achieving budgeted revenue and labor expenses, while assisting departmental managers in achieving predetermined profit objectives and quality standards in food, service, cleanliness, merchandising, and promotions. The role involves regularly reviewing customer satisfaction across outlets including banquet service, recommending new operating and marketing policies based on changes in demand, competitive environment, or customer dissatisfaction, and investigating and resolving food quality and service complaints. The Director develops operating tools aligned with modern management principles such as budgeting, forecasting, purchase specifications, recipes, portion specifications, menu abstracts, food production control, and job descriptions. The position ensures compliance with Hilton Hotels Corporation policies and procedures related to food and beverage, as well as local, state, and federal laws and regulations. The Director is responsible for hiring, training, supervising, developing, disciplining, and counseling Food and Drinks (Management) Team Members in accordance with HHC policies and procedures, while supporting Hiltonās vision to deliver exceptional guest experiences across global brands within the lodging sector ranging from full-service hotels and resorts to extended-stay suites and mid-priced hotels.

Experience & skills
- Obtain a four year college degree preferred to support the management and strategic direction of the Food & Drinks division.
- Demonstrate at least 5 years experience managing food and drinks operations preferred within a hospitality environment.
- Manage food and drinks operations across restaurants, bars, banquets, room service, and special events with responsibility for revenue and profitability.
- Work on behalf of Guests to deliver exceptional guest experiences aligned with Hilton brand standards.
- Collaborate effectively with other Team Members and department heads within Hilton brands.
- Maintain the attitude, behaviours, skills, and values required to successfully fill the Director of Food & Drinks role.
- Operate in alignment with Hilton Hotels Corporation policies and procedures related to food and beverage operations.
- Support Hiltonās tradition of providing accommodations, service, amenities, and value across the lodging sector.
