The Restaurant Manager – Lebanese Cuisine (Arabic Speaker) at Fairmont Bab Al Bahr in Abu Dhabi is responsible for leading all aspects of food and beverage operations within a luxury five-star resort environment, with a particular focus on Lebanese culinary offerings. The role involves planning, coordinating, and overseeing all restaurant activities to deliver exceptional dining experiences that align with Fairmont and Accor luxury service standards. The Restaurant Manager ensures operational excellence across service, culinary execution, guest engagement, and safety compliance. Key responsibilities include supervising and coaching all team members to maintain high staff morale and consistent service excellence, managing staffing levels through recruitment, scheduling, and performance monitoring, and implementing colleague training initiatives to uphold service quality. The manager collaborates closely with culinary and stewarding teams to ensure the quality of food and service meets or exceeds guest expectations. The role includes comprehensive oversight of financial performance, including budgeting, cost management, revenue optimization, and analysis of P&L reports. Additionally, the manager ensures compliance with food safety, hygiene standards, HACCP requirements, and Abu Dhabi municipality regulations, while maintaining a safe and healthy work environment. Strategic initiatives involve innovating menu items, promotional offerings, and guest preference programs to enhance guest satisfaction and revenue generation. The Restaurant Manager is also responsible for managing reservations, arranging private functions or special events, and performing daily operational checks on staffing, quality control, cleanliness, and equipment performance, ensuring a seamless, personalized, and culturally authentic dining experience.

- Lead, coach, and motivate all restaurant colleagues to maintain high staff morale, team spirit, and consistent service excellence
- Oversee recruitment, staffing, and scheduling to ensure adequate coverage for all shifts and guest service needs
- Develop, implement, and enforce five-star service levels, including guest preference programs and personalized dining experiences
- Coordinate closely with culinary and stewarding teams to ensure Lebanese cuisine offerings and service quality meet or exceed guest expectations
- Monitor and develop Food & Beverage financial controls, adhering to departmental and organizational budget guidelines
- Analyze outlet performance, including guest satisfaction, operational equipment, and service quality, implementing corrective measures as needed
- Create, innovate, and execute promotional initiatives and menu enhancements to drive revenue and attract guests
- Ensure compliance with food safety, hygiene standards, HACCP, and Abu Dhabi municipality regulations to maintain a safe and healthy environment
- Participate in the preparation of the Food & Beverage department budget and operational goals
- Manage guest reservations and coordinate private functions or special events within the restaurant
- Perform daily checks on staffing levels, quality control, maintenance, and cleanliness to ensure optimal operational efficiency
Experience & skills
- Minimum 5–7 years of progressive experience in Food & Beverage operations within a five-star luxury hotel or high-end standalone restaurant, including 2–3 years in a Restaurant Manager role
- Strong knowledge and expertise in authentic Lebanese cuisine, service styles, and cultural dining etiquette
- Proven leadership and people management skills, including recruiting, training, coaching, and developing multicultural teams
- Deep understanding of luxury service standards, personalized guest engagement, and fine-dining experiences
- Solid experience in budgeting, cost control, revenue optimization, and P&L analysis
- Knowledge of food safety, hygiene standards, HACCP compliance, and Abu Dhabi municipality regulations
- Ability to manage guest relations effectively, including complaint handling and problem-solving with a proactive service mindset
- Fluency in English with Arabic language skills highly preferred
