The Specialty Restaurant Manager at Fairmont The Red Sea is responsible for leading specialty dining operations within a luxury resort environment located in Umluj, Saudi Arabia, as part of the Red Sea Project featuring 361 rooms, eleven distinct dining concepts including overwater restaurants, spa facilities, and proximity to an 18-hole championship golf course. The role oversees all aspects of restaurant operations including opening and closing procedures, staff supervision, inventory management, cost control, financial performance, and guest experience delivery. The position requires ensuring compliance with Saudi Arabian and international health, safety, and sanitation regulations while maintaining operational excellence and profitability. The Specialty Restaurant Manager coordinates with kitchen teams and vendors to maintain specialty cuisine quality standards, analyzes sales data and performance metrics, and implements strategies to enhance customer satisfaction and loyalty through personalized dining experiences. The role includes managing budgets, maintaining financial reports, scheduling staff, planning special events, promotions, and marketing initiatives, and customizing dining experiences to meet guest preferences. The position requires proficiency with Point of Sale (POS) systems, restaurant management software, inventory management systems, and financial analysis tools, while supporting pre-opening operations and delivering exceptional luxury hospitality experiences within a sustainable resort destination.

Key responsibilities
- Oversee daily restaurant operations including opening and closing procedures, service delivery, staff supervision, and operational workflow to ensure smooth and efficient specialty dining experiences
- Supervise, train, schedule, and motivate restaurant staff while maintaining high performance standards and fostering a positive working environment
- Manage inventory, food costs, budgets, and cost-control measures while maintaining financial performance and profitability targets
- Ensure compliance with Saudi Arabian and international health, safety, and sanitation regulations while maintaining operational standards
- Coordinate with kitchen staff and vendors to maintain specialty cuisine quality standards and operational efficiency
- Analyze sales data, financial reports, and performance metrics to identify opportunities for operational improvement and revenue growth
- Plan and coordinate special events, promotions, and marketing initiatives to drive revenue and enhance guest engagement
- Handle customer complaints, customize dining experiences, maintain records including financial reports and staff schedules, and enhance customer satisfaction and loyalty
Experience & skills
- Possess 3–5 years of progressive restaurant management experience in specialty or fine dining establishments within luxury hospitality environments
- Demonstrate expertise in managing high-volume restaurant operations with diverse customer bases and specialty cuisine offerings
- Exhibit proficiency with Point of Sale (POS) systems and restaurant management software used in food and beverage operations
- Show strong knowledge of budget management, financial analysis, inventory management, and cost control strategies
- Demonstrate comprehensive knowledge of health, safety, and sanitation regulations including Saudi Arabian compliance requirements
- Exhibit experience coordinating vendors, managing staff schedules, and supervising restaurant teams
- Demonstrate experience planning and executing special events, promotions, and marketing initiatives within restaurant operations
- Possess ability to work flexible hours including evenings, weekends, and holidays in line with restaurant operational requirements
