Job description
The Assistant Director of Food & Beverage at The Ritz-Carlton Amaala provides leadership and direction to all Food and Beverage outlets including Restaurants, In Room Dining, Café Services, and Beverage outlets. The role involves managing daily activities, monitoring performance of F&B management and service teams, ensuring operational policies and procedures are maintained, and verifying compliance with HACCP, OSHA, and regional Alcoholic Beverage Commission guidelines. The position assists in developing and managing the strategic plan for the F&B division, including budget administration, forecasting, inventory and cost control. The role also manages the development of the F&B outlet management team, creates marketing and promotional opportunities, monitors outlet performance, researches market trends, and ensures training in sanitation, food safety, and customer service.

Key responsibilities
- Provide leadership and direction to all Food & Beverage outlets and staff including Restaurants, In Room Dining, Café Services, and Beverage outlets.
- Manage daily activities and monitor performance of F&B management and service teams.
- Ensure all outlet operational policies and procedures are maintained.
- Verify compliance with HACCP, OSHA, and regional Alcoholic Beverage Commissions guidelines.
- Assist the Director of Food & Beverage in developing and managing the strategic plan including budget administration, forecasting, inventory, and cost control.

- Create and manage marketing and promotional opportunities for Food & Beverage outlets to attract local clientele.
- Monitor status and progress of each outlet to maintain operational consistency.
- Research market trends and concepts to recommend appropriate products, services, and operational changes.
- Ensure all F&B teams are trained in sanitation, food safety, and customer service.
- Conduct employee interviews, selection, training, and performance appraisals.
- Monitor employee attendance and productivity, assisting supervisors in achieving development goals.
- Comply with corporate accounting procedures and perform additional duties as assigned.
Experience & skills
- High school diploma or GED with 4 years of experience in F&B, culinary, or related area, OR 2-year degree in relevant field with 2 years of experience.
- Proven experience managing Food & Beverage outlets and teams.
- Knowledge of HACCP, OSHA, and regional Alcoholic Beverage Commissions guidelines.
- Experience in budget administration, forecasting, inventory management, and cost control.
- Experience in F&B marketing and promotional planning.
- Strong leadership, training, and performance management capabilities.
- Ability to maintain high standards of sanitation, food safety, and customer service.
