Job description
The Food & Beverage Manager at Six Senses The Palm, Dubai is responsible for overseeing the full operational management of the resort’s Food & Beverage department while aligning with the Six Senses brand philosophy of sustainability, wellness, and delivering extraordinary guest experiences. The role ensures the implementation of brand directives that reflect the company’s values of local sensitivity and global sensibility, crafted experiences, emotional hospitality, responsible and caring practices, fun and quirky service culture, and pioneering wellness concepts. The position requires safeguarding the pillars of sustainability and wellness by embedding them into strategic planning, operational execution, and guest service delivery throughout the resort. The manager leads the efficient operation of the F&B department to deliver exceptional product quality and service standards aligned with brand operating guidelines and luxury hospitality benchmarks. The role includes ensuring compliance with LQA and Forbes audit standards while establishing operational guidelines and procedures in accordance with Six Senses brand standards. The manager oversees the development of menus and wine lists aligned with the Eat With Six Senses philosophy and sustainability practices while ensuring food and beverage offerings remain relevant to guest expectations and current market trends. Responsibilities include establishing purchasing practices that meet the Six Senses nutrition and sustainability platforms, implementing financial strategies to achieve revenue generation targets, profitability, and return on invested capital (ROIC). The role also requires developing and implementing local food and beverage marketing initiatives, monitoring competitor activity and industry trends, and ensuring operational compliance with legal, statutory, financial, safety, and contractual requirements. Additionally, the manager oversees reporting systems, host management practices, communication protocols, and budgetary controls to maintain efficient and compliant operations. The position requires extensive expertise in luxury dining environments, including European and Middle Eastern cuisine operations, advanced wine and beverage service knowledge, and leadership in managing high-end restaurant floor operations within a luxury hospitality setting.

- Lead the overall Food & Beverage operations of the resort in accordance with Six Senses brand guidelines and LQA and Forbes audit standards
- Establish and implement departmental guidelines and operating procedures aligned with brand operating standards
- Develop and manage purchasing practices that comply with Six Senses nutrition and sustainability platforms
- Design and maintain menus and wine lists aligned with Eat With Six Senses philosophy and sustainability practices
- Deliver financial performance targets including revenue generation, profitability, and return on invested capital (ROIC)
- Develop and implement local food and beverage marketing programs while monitoring competitor activity and industry trends
- Ensure property operations comply with legal, statutory, and financial reporting requirements and contractual obligations
- Oversee safety, security, communications, reporting systems, and product and service standards across F&B operations
- Implement and maintain host management practices and budgetary controls to ensure efficient departmental performance
- Support the strategic development and implementation of sustainability, wellness, and brand initiatives across the resort
Experience & skills
- Bachelor’s degree in Hotel Management, Culinary Arts, or a related hospitality discipline
- Minimum of 4 years of relevant experience in a similar Food & Beverage management role within luxury hotels or resorts
- Demonstrated leadership experience managing high-end European and Middle Eastern dining operations
- Extensive knowledge of luxury restaurant wine and beverage service standards and practices with formal certification preferred
- Proven expertise in managing luxury restaurant floor operations and delivering high-quality guest service experiences
- Strong strategic decision-making capabilities with a track record of success in revenue generation, operational excellence, customer satisfaction, and employee engagement
- Ability to lead and manage large hospitality teams while maintaining visible and proactive leadership presence
- Strong organizational skills with the ability to oversee complex hospitality operations and ensure compliance with brand standards
