Job description
The Hygiene Manager at JW Marriott Hotel Riyadh is responsible for overseeing and ensuring the highest standards of hygiene and food safety across all food and beverage operations. This role involves monitoring compliance with Brand Standard Audit (BSA) requirements, advising food handlers on proper practices, identifying risks in food operations, and taking preemptive corrective measures. The manager conducts regular kitchen and vendor inspections, liaises with local health authorities and pest control services, coordinates cleaning programs, maintains detailed documentation, and delivers in-house food hygiene training for all staff. The position ensures regulatory compliance, supports operational excellence, handles customer inquiries, and promotes a culture of continuous improvement in hygiene and food safety within the hotel environment.

Key responsibilities
- Verify compliance with Marriott International’s Brand Standard Audit (BSA) requirements throughout all F&B operations.
- Advise and monitor food handlers on proper food handling practices and ensure their adherence.
- Identify key areas of risk in various food operations and implement preemptive remedial actions.
- Ensure compliance with food and hygiene regulations, licensing conditions, and codes of practice related to food operations.
- Provide technical advice on product labeling to meet government requirements.
- Conduct in-house food hygiene training for new hires, trainees, and existing food handlers.
- Handle complaints or enquiries from customers and local food safety and health departments.
- Perform and document daily kitchen inspections covering personal, environmental, and food hygiene conditions, implementing corrective action plans as necessary.
- Conduct regular vendor inspections in partnership with purchasing and culinary leadership.
- Carry out internal BSA inspections with culinary leadership and kitchen cleaning staff.
- Inspect kitchen equipment regularly and ensure defects or non-conformities are addressed appropriately.
- Coordinate cleaning programs across all F&B areas, track trends, and recommend improvements.
- Establish and maintain open, collaborative relationships with employees and culinary teams.
- Liaise with pest control providers and monitor performance to prevent pest issues.
- Maintain and enhance hygiene standards across the property.
- Regularly review and update food safety standards and ensure staff adherence.
- Maintain thorough documentation of all hygiene and food safety standards throughout operations.
Experience & skills
- High school diploma or GED; OR 2-year degree in Hotel and Restaurant Management, Hospitality, Business Administration, or related major.
- Preferred: Environmental Health Degree or Culinary Degree.
- Minimum 2 years experience in food and beverage, culinary, or related professional area.
- Strong knowledge of food hygiene, safety regulations, and government compliance requirements.
- Experience conducting training and coaching for food handlers.
- Ability to conduct inspections and implement corrective action plans.
- Proficiency in documentation and record-keeping of hygiene and safety standards.
- Ability to liaise effectively with vendors, internal teams, and regulatory authorities.
- Strong organizational and risk assessment skills.
- Ability to establish collaborative relationships and maintain high standards across multiple operations.
